1) Elk
2) Bison
2) Nilgai. Tie for 2nd
3) Venison... Doe that has been eating enough grains. Younger bucks eating the same diet are fine too.
4) Quail

3. Pronghorn.. big bucks included
4. Elk..spike

I had moose at a camp in MI a handful of years back. I think it was roasted in the oven. The guy had just come back from AK.

It was the best wild game I ever had, he may of prepared it well too.

I've only had moose, elk, and whitetail also. While I eat alot of whitetail each year (cause I don't get to hunt the others) Moose & Elk are WAY better in my opinion. Moose #1, Elk a close 2nd.

One thing about wild game (or any meat really) how its handled after the kill, and how its prepared can make a huge difference in the taste. Diet can as well... a corn fed whitetail taste alot better than one only eating acorns and browse.

That is my favorites. Been over twenty years since I last ate whitetail deer. I remember that it tasted good though. Nothing like a hot smoked elk tritip though. Yummy yummy yummy.

My very favorite wild game is Ruffed Grouse. Nothing tastier lives on earth.
 
For big game, I've only had whitetail deer and moose, moose is better, deer is pretty darn good.
I've had a lot of small game, cottontail rabbits and partridges would be at the top.
I've been a waterfowl hunter for much of my life and I've killed and eaten just about every species of ducks and geese there are, Woodducks and Mallards are at the top, young Canada geese are good if you know what you're doing.
 
if it has to be an antlered animal only, whitetail deer & elk are all I've had & I loved both.

if it could be any one animal I would choose a nice, big, bloody rare buffler steak.

but in reality, if it's fixed right my favorite would be whatever animal was on my plate at the moment. :yeah:

I'm with you, younghunter_86. That's usually what hits my freezer. I am lucky enough to hunt a farm that is over-run with does and spikes and they get damage stamps every year. Yay for out team!

Try a young, early season (November) button buck fed on a wide variety of white oaks and grapes. I don't have a huge basis for comparison, but the young deer I help manage at a vineyard are fantastic. I've cooked venison for people who swear they don't like venison. They ask about my special seasoning and I tell them salt and pepper, maybe a little paprika. Good meat does not need a lot of dressing up.

My guess is the animal's diet is likely as important as the species.
