I've been trying a few things in the crockpot lately, Grouse anyway, which turned out well.

I have some Elk meat almost thawed out. Since I am off for awhile I thought I'd try it. I looked on the net for some ideas. They listed the usual Cream of something soup, which is part of my plan. I like to make it almost like a pot roast with potatoes, carrots, & a few onions. The sis in law did something similar, turned out well, we shall see.
 
When I get a deer that yields a strong or gamey taste and want a roast I add a can of beef broth to the pan for moisture and flavor. Works good on vennie, try it on your elk.
 
My crock delight was superb. The wife even said it was as good as any better roast beef. I'll be eating leftovers until it's gone.
