Nutria southern style rice and gravy
1 young Nutria deboned and cut in to dice sized pieces.
1 yellow onion
2 cups of long grain rice
All purpose flour
Vegetable oil.

Season the meat lightly with Cajun seasoning.
Coat the meat heavily with flour.
Brown the meat ( Rare)in a skillet with about 1/4" of oil in it.
After all the meat is done pour off the excess oil leaving drippings in the pan.
Transfer the transfer the drippings in to a deep sauce pan, add the browned meat in with the drippings .
Add a cut up onion and cover with water.
Simmer at low heat till the onions are done.
Serve over a bed of rice.
 
Nutria, I believe is a south american rodent, looks like a cross between a beaver and a muskrat in my opinion. Brought to the US to be raised for its fur back in the early 1900"s sometime and got released in the wild when fur farms went belly up back in the depression area (or so I understand). They are a big problem in the south. I lived in Washington State for a while several years ago and they were causing problems on the lower Columbia River and its tributaries. Dont know how they got to Washington.
 
In 2017 we were flooded by Tropical Storm Harvey. I work for the fire department and we here housing our guys and around 200 national guard troops. The cajun navy guys came in and cooked for us. It was absolutely great nutria jambalaya. I would definitely eat it again.
 
I have hunted Nutria with Terriers, Around Albany Oregon several years ago, it was fun :lewis: Nutria are Similar to a Muskrat
