    I did try the cheese at about 3 1/2 weeks. Not bad but still a little strong on the smoke flavor. I did smoke for a full 4 hours. I'm guessing that it will be much better after a couple more weeks. If I do this again, I might try only smoking for 3 hours.

    I have an old Remington 700 .243 I love this gun. Have it loaded with 70 grain bullet and have used it for ore than 40 years for deer and coyotes. doesnt kick much. Always a good kill on deer and doesn't do all the meat damage that my 30'06 does.

    I've done it dry and with wet brine. I haven't noticed much of a difference. But I have never tried using the Tenderquick (just salt). I'm getting ready to pull a salmon from the freezer and experiment before I do a good load. Will try the Tenderquick and see what happens.
