My Antelope Sausage Recipe, it's awesome and could be used with any game I suppose.
ANTELOPE SAUSAGE 25LB RECIPE
This recipe is for 25lbs of Antelope Meat, adjust proportions as needed for less or more.
**This recipe is for casings, you may back skip Cider if not putting into casings**
• 25lbs, clean cubed meat
• 8.5 – 11 lbs. Pork Back Fat (25-30% ratio)
• 3-3.5 Yellow Onions (chopped)
• 1+ Tablespoons Cooking Oil
• 6 Tablespoons + I Teaspoon Fresh Sage (minced)
• 2+ Tablespoons Fresh Thyme Leaves (minced)
• 2+ Tablespoons Fresh Rosemary (minced)
• 1+ Tablespoon Celery Seed
• 1.2 Cups Kosher Salt
• 2 Tablespoons + 1 Teaspoon Black Pepper
• 9.5 Cups Apple (finely chopped)
• 3 1/8 Cups Apple Cider (chilled)
• If you want HOT RECIPE, add Habanero’s (3), Jalapeño (5 or 6) and Crushed Red Pepper (2 bottles)
