The tomatoes, garlic, shallots and basil in this bowl are straight from my garden this morning. A little seasoned salt, t touch of honey and a quarter cup of olive oil are also added here. This will go in the fridge until dinner time tomorrow when I'll drain the mixture then add a half a cup of coarse grated parmesan cheese.

When the tomato mixture has drained I'll cut a loaf of Italin bread in half then split it length-wise into a top and bottom. The cut faces with get spread with freshly pressed garlic butter, placed butter side up on a cookie sheet and toasted lightly in the broiler. The tomato mixture then is spread evenly over the toasted bread and put back in the broiler for about 5 minutes....medium shelf height, broiler on high.

This is great meal a day before the inlaws may be stopping by to visit. No vampires either
