I had to pull the smallest piece to slice up for the fridge this morning. Sure smells good and knife-cuts to 1/8" very easily. For the pieces that didn't make the bag destined for the fry pan I started a nice trim bag that will be used in baked beans. This piece had the most fat of any of the three. The other two larger chunks have had the fat reduced quite a bit.

And the real test was passed in a big way this morning.
