Nothing finer than fresh smoked trout. You did a great job on them. I'm headed for Lake Superior for 4 days tomorrow and hope I have some smoking goods when I get home.
 
When I lived in Alaska for two years I ate a lot of smoked salmon, reindeer sausage, and moose meat that was gifted to me. Yum.

That trout looks real good

A lot of Alaskans smoke their salmon before pressure canning it.
