Here's a simple recipe I recently tried from our friends at McCormick Spice Co. in MD. YUMMY!!
1 tablespoon butter
1/3 cup finely chopped onion
1 cup finely chopped seeded tomaotes
1/4 cup McCormick? Golden Dipt? Cajun Style Marinade
1/2 teaspoon McCormick? Minced Garlic
1 1/2 pounds rockfish* or striped bass fillets
1. Melt butter in medium skillet on medium heat. Add onion; cook and stir 3 minutes or until softened. Stir in tomatoes, marinade and garlic. Reduce heat to low; simmer 3 minutes, stirring occasionally.
2. Place fish in single layer in lightly greased baking dish. Spoon tomato mixture over fish.
3. Bake in 375? F oven 15 minutes or until fish flakes easily with a fork.
* Wild Striped Bass, also known as Rockfish (Atlantic), is a smart choice. Substitution: Pacific Cod, Striped Bass (farmed), Tilapia (farmed)
