This is the traditional meal in my house when someone gets their deer. If it's just my wife and I we use 1 backstrap and if we have guests we use 2. They go pretty fast. I would not recommend this recipe if you are on a diet as it is a little fattening.

Ingredients:
1-2 Backstraps
2 sticks of margarine
1-2 Onion
1-2 peppers
Hamburger buns or bread

Tools required:
Cutting board
Tenderizing mallet
2 skillets
knife

Cut the backstrap into 1/4"- 3/8" thick sections. You may also butterfly them, but make sure the "wings" are no thicker than 1/4" -3/8". Tenderize them all so they are good and thin. Slice the onion and peppers as thin as possible.

Place 1 stick of margarine in each skillet and add heat.

Add the onions and peppers to one skillet and the chops to the other. The onions and peppers are done when you can cut them with a spatula. The chops are done when there is no blood left in them, but be carefull not to burn them.

Place chops on your buns/bread then add peppers and onions. Enjoy!
