how do you make your hot pepper dipping sauce?

picked 3 gallons of spanish hot peppers. not red hot but hot. cut the stems off them and put in a glass covered oven bowl. been heating all day at 170 degrees. put one can of apple concentrate in with it. will heat all day tomorrow also along with about the same amounts of bell peppers from the garden in another container. will mix vinegar, garlic powder olive oil and salt and black pepper in the blender with the wilted slow cooked peppers. blend smooth and cook slow to reduce to a thick sauce. will can or freeze to use. anything else i can mix with this mixture to make it taste better? im open to anything that you have tried that works for you?
