I've killed about 20 hogs in Florida, only one was fit to eat. It was a fat gilt that never had any pigs to drag her down.
I killed one sow that 2 guys helped me drag out so I told them I'd take the loins and they could have the rest. I started to cut the loins out and the knife hit the top of the ribs immediately. I stopped and told them to take the whole thing. The loins were only 3/4" thick.
 
I would have enjoyed a little more thickness in the loins on the Green Swamp pigs. 
But, I was able to work with what was there and it was tasty. 

Now, we did work like slaves to make certain we had every chance of getting the best we 
could for the table. And, you never really know till you do all that work and get the first bite 
if it was worth it. Whew!

I am a more than adequate cook. Or, so says my wife. In fact, If truth be told, I am probably better- on 
the whole- with cast iron than shooting iron. :Shh:  Don't tell anybody. I would likely be the camp cookie on 
any real adventure.

Well the largest Hog I ever killed was here in Missouri and it was very good eating but it will be the last because the state no longer allows me to hunt them.

Now they are talking about giving them Warfarin :evil:
