About a year ago I made some gravlox (cured salmon) for the first time and posted the reciped I used here. Well, the other day got the itch , or should I say a hankerin' for some. Yesterday I went and bought a couple of salmon, about 3 pounders, and last night put together the cure and got them started. Last year I tried smoking them but the smoker I had got them a little to warm, and although they were OK, not quite what I had in mind. I now also have a Bradley smoker which allows me to use a "cold" smoke. Smoking will happen tomorrow and I'll see how it turns out.
