A buddy gave me some antelope steaks, and since we don't see many of them critters in this neck of the woods, can any of you give me an idea as to how's the best way to do it?
 
I can't give you the recipe 'cause I don't know it. It's been a long time since I've an antelope steak but when I did, my wife used a recipe she had for veal parmigean and substituted the antelope for the veal. All I remember was that it was delicious and you didn't need a knife.

Are the properties of antelope meat pretty much the same as deer?
 
Pronghorn Antelope are a member of the goat family. I don't remember it being like deer other than real lean. Very tender though
