Well went down where the Park spring runs into the Niangua River caught couple messes for me and my wife, caught two Rainbow Trout and a Redhorse.

Some body said I caught a Carp, I said no this is much better.

Well if your talking about difference between Carp and Suckers. Carp is not Native Suckers and Buffalo are.

Suckers are the Best Eating Fresh Water Fish there is. Here in Missouri we have Special Celebration called Sucker Days. People come from all over the World to eat Fried Suckers.

Here all Winter at night people go on the river as they have forever Gigging Suckers the Spring they Grab them. Here it is mostly Redhorse and Hog Mollies.

My wife says with my Health it is best I not go Gigging so I just catch them with Rod and Reel.

Now as far as Carp. When I was a Kid they sold Carp in the Stores and had Lakes where people paid to fish for them. You bought a Ticket for so many pounds then so much for every pound over your Ticket.

Fishing for trout in small rivers I've caught plenty of bait-robbing :x suckers.  We would throw them on the river bank for the raccoons.

I tried smoked carp one time.  As I remember it, it was pretty good.  But then, most smoked fish is good.  Folks like to smoke suckers also and from what I've read the Red Horse are the better tasting ones. 
Now "Hog Mollies"....I had to look them up on google.  I've never even heard of them.

It's all in knowing how to take care of fish as you catch them, then how to cook them once you get home.

I can honestly say I've never had a bad bite of  any fish that was caught and prepared by folks that knew what they were doing. I've also had very bad "big name" fish that wasn't taken care of and cooked right.

For me the difference lies entirely in the hands that hold the rod and the frying pan.  Can't blame the fish for the mistakes of the folks. Just like there's good and bad beef out there, but the difference is not the fault of the steer.

Well when I was a kid ,I had a Uncle that would take me fishing and we would catch carp. He would take them, clean them and fry them, we ate them and they where good.

In my teen years I had red horse and it was good. So that was why I was asking., If I was to catch one how would I tell the difference. The carp I have caught but I am not so sure of the red horse.

From what I've heard, carp are a prized fish in Europe ... of course, Europeans eat snails too.

Ate several species of carp and a whole lot of it while working around the Orient.  Right up there with the best fish I've had over here. While in high school one of my bud's family was big on carp, preparing it with some southern recipes from their family. Right up there near the top of the heap too. I've eaten bad as well here and there, but always a reflection on the guy doing the fishing or the cook back home.

If carp tastes like flounder, I should have been eating for the last 60 years. 

People have tried to get me to eat mudfish (bowfin, grindel) but I could never get by the ugly looks of the things.

Most people who have eaten it say you have to eat it real hot, right out of the grease or it chews like cotton and gets bigger in your mouth the longer you chew it.

They are good fighters though but their teeth will tear up a new Rapala.
