I like to do them mashed

Peel and dice and boil like you would for regular mashed taters

Mash em with butter, a bit of cream, lots of butter, a tea spoon of molasses and a healthy dose of ground cinnimon

Instead of molasses you can use a few table spoons of dark brown sugar

A grate or three of nutmeg is not out of place

And leftovers can have a bit of sweet condensed milk whisked in and then you basically got sweet tater pie filling - do a quick pie crust or experiment with puff pastry shells or sheets
