On year 4 of this hunting learning curve, do you mean butcher it right there? Any tutorials you would recommend for learning?
I guess it depends on the legalities of your state. Over here we have no legal requirement to take any meat at all so I don't have any quirky laws to deal with. I typically bone out the bag legs, hock the forequarters, take out the back straps, tenderloins and heart. I can fit all of that in a backpack in one load on a deer the size of your whitetail.

Not sure about any tutorials, but I'm sure someone has done it on YouTube.
